Mini Lime and Ginger Cheesecakes. Made with almond meal base, ricotta filling, and berry compote (which I had to add some cheeky gelatin to so it won't dribble all the way down the sides lol). Some grated mandarin on top for dat dere ba-ZING-a.
I am digging these 'Rusks' from Aldi lately!
There's nothing especially attractive about them; they're not overly sweet, they're quite dry and hard, but by god they're more-ish!
Are they like scones or similar?????
