Ginger and chilli shark belly
All fresh local ingredients
500g shark belly - caught in SA today - Fish was $8/kg and I filleted it myself so have some steaks too, bones made into a broth
Ginger, about a 5cm cube... cut into matchsticks
Green chillis, 4 little ones, stems removed then sliced into circles
Fry the shark in coconut oil, 3 mins a side
Put them on a plate
in the juices add the ginger and chilli, add tablespoon of 30% rice spirits and tablespoon soy sauce, fry for a minute
Then spoon onto the shark
Serve with rice, cooked in butter and with coriander stirred in
