i take it all back - i tempered it perfectly. great snap, great colour and finished. delicious.

baking bacon in the oven - how have i lived without that for so long? and more importantly, any ideas for what i can do with the bacon drippings?

LOL yep, cooking it in the oven is awesome.

for the bacon drippings ... use to fry up eggs OR use drizzled over bitter greens or salads. That's what they do in Europe.

On the show 'Secret Meat Business' over xmas, he did a show on bacon, and finished off with a sugar cured bacon deep fried and then covered in chocolate....
