I usually just grab some of those packet flavour mixes and throw one or two of them in depending on what you're making.
Pretty much anything you make in a slow cooker should be cheap as it's cooking for so long, you don't need to use a expensive cut of meat.
+1 for the packet mixes that are going around at the moment. Also not slow cooking but if you are making meatballs, grab the tuscan meatballs pack, shit is cash.
Wifey just made a lamb caserole and a chicken casserole today to freeze in smaller batches. Ill get the recipes tonight.
