Sweet Potato & Banana Whey Pancakes

Had these for breakfast a few times. Consistently fantastically delicious!
They are really good topped with greek yoghurt and maple + cinnamon and some grated lemon zest or a 50/50 mix of fresh ricotta and greek yoghurt with the topping is sublime. Add a little extra lemon juice to it and it's amazing.

Sweet Potato & Banana Whey Pancakes

Makes: 4 pancakes (serves 1 or 2)

Ingredients
110 grams liquid egg whites
35 grams sliced banana (about half a small one)
50 grams cooked sweet potato (boiled or steamed)
30 grams plain WPI (or vanilla)
25 grams raw almond meal (I use unblanched)
1/4 teaspoon vanilla powder or extract
15 grams golden flaxmeal (eg Melrose)
1/4 teaspoon baking soda
pinch of sea salt
a good squeeze of lemon juice (about 1 - 2 teaspoons)

Directions
Blend all the ingredients together. Let sit for 10 mins or so, if you can.
Heat your pan .. I use a non stick pan but also spray a little EVOO spray to make sure it won't stick.
I make about 4 larger pancakes with this batter.

They are quite fluffy and light ... no rubbery whey pancakes here!
I've found the trick to whey pancakes is not to add milks or water to the batter. Letting the moisture come from the egg whites and other ingredients seems to give a better result. Maybe it's just me.

Serve warm topped with lemon ricotta yoghurt cream, cinnamon and maple syrup.

Macros for the pancakes (total recipe): 444kCals, P/C/F = 53/22/15 of which 1g sat fat and 8g sugar, plus 9 grams of FIBRE

Sea Salt Protein Brownies

OK, these have 10g protein per brownie at 221kcals. they are not low in fat but are choc full of good fats.
They are also proper brownies with a protein hit you won't get from your average brownie. but not one of those "faux brownies' made with beans and stuff.

SO ... my contribution for a proper protein brownie, with macros etc included ...

Mexican Protein Brownies
(chocolate, cinnamon, chilli)

Lower in fat, fudgy, chocolately goodness. Nice post workout snack.

If you polish off 1/4 of the batch you’d be up for 305.5 kCals, 21.75g protein, 30g carbs, 11g fat, and 4g dietary fibre.

Orange & Ginger Prawns

Here's a simple but sensational prawn dish that takes 10 mins to cook and is really quick and easy to put together.

Plus, check out those macros :D:D

Total Recipe: 514kcals, P/C/F:83/21/7 of which 4g sat fat, 3g fibre

Serves 1, 2 or 3 people (depends on appetite, course)

Ingredients

460g raw prawn cutlets (peeled with tails on)
1 orange
2-3cm piece of fresh ginger root (peeled)
1 teaspoon extra virgin coconut oil, melted
1 1/2 teaspoons ground coriander seed
a dash of ground cayenne
salt and black pepper
1 teaspoon basil pesto OR 1-2 tablespoons freshly chopped fresh Thai or Italian basil*
1 clove garlic, minced (optional, I don't use it)

*I use fresh basil in summer but made it with some basil pesto this time as I have no fresh basil. To be honest, it's fantastic with the pesto too :)
I don't use garlic in this dish as it doesn't need it, but you could if you really wanted to. I think the flavours are delicate and delicious without it, but each to his/her own!

Directions
Preheat the oven to 200C.

Wash the prawns and drain or pat dry. I usually remove the tails before cooking but you can leave them on. They look cool, it's just a pain when you have to remove them at the table.

Grate the zest of the orange. Place the zest and juice of the orange into a roasting pan.
Finely grate the ginger and add, with juices, to the pan.
Add the coconut oil, coriander and cayenne.
If using the basil pesto, add it also at this time. Ditto the garlic, if you are adding it. Mix well.

Add the prawns to the pan and season with salt and pepper.
Toss to coate evenly with the mixture and arrange in a single layer in the pan.
Place in the oven for about 10 minutes, until cooked through.
Remove the prawns and place them in a serving dish and keep warm.

Pour the juices into a saucepan over a medium heat and reduce the liquid down to about half it's original volume. Pour over the prawns. If using the fresh basil, add that in now and toss to combine.
Serve immediately.

This goes really well with a green salad, avocado, anything really.
Lots of fresh crusty bread or rice to mop up the juices! :)

I actually JUST bought a brownie tray, so I know what I'm making this week. Except liquid egg whites are ridiculously hard to come by here, and the powdered stuff tastes like upchuck, so I think I'll just break some eggs the old fashioned way.

Speaking of way, the only powder I have is whey (chocolate mint, could actually work, could be disastrous) but I've heard that cooking whey is naughty-naughty terribad for the protein content (though I do stir it into very warm/hot oatmeal on a regular basis)... thoughts?

Considering the processes to get whey powder, I'm not so sure it matters, but there are smarter people than me.

Jay, you can cook with whey but really need to observe some rules - whey absorbs moisture like a sponge and will make baked goods dry and rubbery. Like eating tyres. A waste of expensive whey. I sometimes bake with it but add in sufficient soft/moist ingredients to keep the texture great.
Good things to use are banana, fruit purees, sweet potato or pumpkin, pureed cooked cauliflower, cottage/ricotta cheese, that sort of thing.

Whey would not work well in the jaffa cookies as they need something that is a good sub for flour. Rice protein is great for that.

The whey might work in some brownie recipes, so long as there is enough moist ingredients and don't over cook.
Choc mint is OK if you like choc mint brownies? Just don't add other flavourings. What brownie recipe were you contemplating?

I bought some sunflower and pumpkin seeds the other day as I noticed that while high in fat they were also high in protein. I've put them in my nut mix which I eat for my last meal at nite. I haven't looked yet, but do you have any recipes these seeds can go in?

yep, you can use them in my protein bars (the low carb ones...they work well with sunflower seed butter too)

You can also just add them to muffins and pancakes and protein breads etc, just toss a few in. Quite a few recipes on my site and others.

Ditto the raw choc protein bars on the site...just use them instead of some of the nuts.
