Been making some soup lately:

3-4 kilos of sweet potato
2 leeks
1-2 cloves of garlic
salt
pepper
some oil
Liquid chicken stock

1) Peel and slice the sweet potato into fairly small chunks
2) Cut the ends off the leeks, chop the centre
3) Chuck the oil into the biggest pot you have and put it on a low heat
4) Once the oil is warm to hot throw the leeks in and let them warm up, wait till you can smell them cooking
5) Throw in the sweet potato and chicken stock and the garlic, turn the heat up to high
6) Once boiling away and the potato is starting to soften, put in salt and pepper
7) wait till spuds fall off the knife/fork when you stab them.
8) Turn heat off and let it cool for 5 minutes, get a stick blender, blend well.
9) Add some thickened cream, stir it in.
10) Eat it.

Bloody nice. Especially with some thick multigrain toast and butter.
