Yeah mate, they are a bit dry. That's why I add the fruit and natural yoghurt.Just tried MikeW's recipe and sorry to say that they were terrible. Just the texture is sooo dry & hard to eat, like most times I've tried to make protein pancakes. Lucky I only made half a batch =)
My personal favourite:
i even add a cup or 2 of spinach for my greens and you have a perfectly balanced meal. you can't taste it but it does turn your pancake bright green haha
Lol GREEN pancakes, sounds awesome! I might try your recipe next saturday, they're not heaps dry from the protein powder are they? That's the one problem i keep havign with the protein pancake recipes =(.
Iron, mate, i think you only need 1 tsp od baking powder, not 1 tbs.... could end up not tasting very good...
Simple and delicious:
1 cup of WPC
1/2 cup of Water
1 egg
1/4 tsp of baking soda
1/4 tsp of vanilla essence
Add the water gradually until the consistency is just right. I find just under a half a cup is what's required. Blend the whole lot until smooth. Wipe virgin olive oil on the fry pan before use to get a nice non-stick surface. Cook on a low heat, turn, cook some more, enjoy.
I like to add fresh fruit and natural yoghurt on top and eat this as my Saturday breakfast. Makes two large pancakes.

Blend:
1 cup oats
2/3 cup cottage cheese
2 whole eggs
4 egg whites
vanilla essence
cinnamon
Slam on cinnamon + sugar free syrup + blueberries = party in your mouth
