Tuna salad for me today after a birthday party last night for a visiting pastry chef I admire very much.
The party was one massive dessert buffet extravaganza. Most of the items were his recipes, recreated by the team at Savour School here in Melb.

Amazing does not even begin to describe it.

The birthday cake (pine lime amazingness under the chocolate glaze)


Lemon petit gateau .. really loved this!


Lime curd, white chocolate mousse, berry compote .. simple, nommalicious and not overly sweet. it's got fruit so must be healthy

cake, little cakes, chocolates, lollipops, verrines ... macro blow out table lol


So today I'm back on this stuff lol

haha me too.

I love making this sort of thing but I don't really eat much of it at all.
When I'm working with chocolate all day or even when making pastries, all I crave is savoury real food!

I was really only there to meet Antonio Bachour as I admire him so much. Very humble guy.
 
Mushroom duxelle.
Finely chopped mushrooms, cooked in butter with onion, garlic and usually a herb like parsley or thyme. Occasionally has a splash of wine in there to make it more of a paste consistency. Goes between the fillet and pastry in a traditional wellington....is also excellent on toast!
