Wickedsauce, I can't wait to try the recipe. No bake version is good! My oven is a bit off on the degC so hard to get things right sometimes!

i have a permanent oven thermometer as a 2nd backup, and a meat thermometer too, but don't need that anymore, its an instinct thing now, you know when its done when you done it enough times
when you have your kitchen registered as a commercial kitchen and pastries are part of your repetoire, it's REALLY BAD.
thank the gods for chocolate, although I still need my oven for that stuff.
Is it expensive to have a commercial oven fixed? If the temperature is off by a set amount, wouldn't that be the thermostat control (which is the issue with mine and I'm going to replace it, but I just have a domestic oven).. now obviously if the temperature yo-yo's about then the solution will be a far more costly one lol.

tragically, the latter
it's been a lemon since the day I got it nearly 6 years ago. $7K of crap oven. Called the service guy in the first week because suddenly my baking skills disappeared ...
