Chicken and Potato Lunch

Serves 1

Ingredients:

250g diced chicken breast (no skin)
1 small potato pealed and diced
Mixed lettuce or garden salad
Mustard powder
Ground paprika
Ground rock salt
Light Italian dressing
Olive oil


Method:

Lightly oil and heat skillet pan. Add the chicken and potato to the pan then grind sea salt over the top. Sprinkle teaspoon of mustard powder and a teaspoon of ground paprika over the top. Cook and stir.

Serve:

Place mixed lettuce/garden salad on a plate and drizzle with dressing. Place contents of the skillet on top of the salad and enjoy!
