I’m dedicating this small message of mine to all who are interested in health above all else.

Before I say another word I would like you to smile. No Fadi hasn’t gone funny lately but you’d be surprised of the influence your beautiful smile has on what takes place inside of your body, behind the scenes if you like. We all know what a frown and a bad atmosphere does to our ability to eat food or digest the food that we’ve eaten. A great atmosphere (as opposed to a rush and hurried one) means the right amounts of digestive enzymes are secreted throughout our digestive system, starting with the saliva in our mouth. The opposite to that would mean the fight or flight/stress hormone adrenaline is released at times when we need to be at our most tranquil moment; around eating time.

Some here may laugh at what I just wrote and say yeh but women are always eating when they’re down not like us men. I say yes look at what our sisters are eating when they’re feeling down, mostly acidic type of foods or drinks I’m willing to bet. Tim Tam vs. an apple; take your pick and tell me which one you’d go for when you’re feeling below par (emotionally).

Losing weight is more than just lifting some weights, or performing some HIIT or whatever else as far as working out is concerned. I’m willing to say that losing weight is even more than eat this or don’t eat that. Losing weight to me first and foremost lies in the state of mind the person wishing to lose weight is in. Nothing that was ever worth building, not even a skyscraper, was ever built without first building its foundation. We all see the finished product whilst forgetting to appreciate the foundation this magnificent work was built upon. Be it a Mona Lisa, a 747 airliner, or the pyramids of Giza in Egypt themselves; all have their foundation and none are comparable to you, the special you who wishes to lose some weight.

So first serving of the day is not caviar but a bright attitude on life. I’ve written about the mediterranean diet once before and there I mentioned that one of the most powerful tool that is well integrated in that diet is the family gathering atmosphere, where everyone is eating, chatting, laughing and most importantly enjoying!

Second serving of the day is prebiotics. Surprised? No need to be, we’ll get to food shortly but food has to reside somewhere and that somewhere better be super ready to welcome it, take good care of it, and end up providing us with the best of the best that this food we’ve eaten has to offer; I’m speaking of our gut, our intestines, our digestive tract, call it what you like. If your gut is unhealthy then all is unhealthy no matter what remedy you throw at your body, you’re on shaky foundation. So nothing short of a healthy gut will I accept and neither should you if health from within is paramount to you. I can hear some of you say that I may have made a mistake in my spelling and wrote prebiotics instead of probiotics. No mistake here, pre has always proceeded pro and it’s not about to change around here now so…stay with me please.

So what are some prebiotic foods, but before that, what is the meaning of prebiotic? Well, prebiotics are food ingredients that can not be digested, but instead, stimulate the growth of probiotics. Prebiotics foods include legumes such as lentils, black beans, kidney beans, chickpeas (humus anyone?), navy beans, butter beans (my favourite along with chickpeas) etc. These prebiotics promote the growth of natural bacteria in your gut (probiotics). Some prebiotic ingredients found in legumes include fructo-oligosaccharides (FOS), arabinogalactan (he’s not an Arab don’t worry!), and inulin which are all rich in dietary fiber. I know some (most) of you like your oats a lot, so you’d be glad to know that this mighty grain does also contain prebiotics and so do these foods as well: barley, whole grains, onions, garlic, greens (especially dandelion greens, but also spinach, collards greens, chard, kale, and mustard greens). Fruits? Sure, how about berries to feed the hungry probiotics (healthy microflora /beneficial bacteria), and bananas, and apples too. There is a famous traditional Lebanese breakfast dish called Fatteh, (the equivalent of having cereal and milk for breakfast in the west). I was brought up on this dish and still have it til this day of course since it’s a powerhouse of a dish, combining both prebiotics and probiotics to make one hell of a synbiotics dish! Synbiotics is the synergistic effect one gets when combining pre and probiotics in one meal. I’ll give you the recipe or some links later on.

The third serving of the day that would strengthen our foundation to losing weight, be healthy, feel vibrant and alive is adding some probiotics foods into our daily eating plan. What are these foods? How about natural yogurt (best to make it at home and if I can make it then you can make it)! Kefir, sauerkraut, tempeh (I’ll stick to what I know and that is natural yogurt I think) and the Lebanese soft and creamy cheese made from it. PM me and I’d be glad to show you how easy it is to make (from yogurt) and into a wonderful spread that is drizzled with some yummy olive oil; I’m getting hungry I think!

Fourthly on our journey we shall meet the foods that should make up the majority of our diet, say a good 80% if health of mind and body is your goal. I’m talking about the alkaline foods here as opposed to the acidic ones. Please do not take that as no acidic food period no! We do need a balance but since our diets are about 80% acidic to begin with and our bodies function better at a slightly base (alkaline) environment, then it stands to reason that we should lean more towards the alkaline foods and concentrate on making sure that our plate is 80% full of these mighty foods. But and yes there’s always that “but” of mine interjecting somewhere. Please be aware that although I have no problem with you consuming your WP, I do have something to say about the already premixed WP powders that are sold to you. See if you can purchase a WP mix that does not have aspartame as its artificial sweetener since this chemical is extremely acid-forming (amongst other unhealthy attributes), which defeats the purpose of our exercise right here. I say buy your WP plain and add stevia as a natural sweetener to it if you really want to go the healthy way (or at least choose a product with no aspartame).

Who here has a fish aquarium? Great not many!!! No seriously, have you ever considered mixing some substance that would throw off the pH of your aquarium water where it increases in acidity and kill all your valued and expensive fish? By the way, some fish cost in excess of $100, 000 (that’s one hundred thousand dollars for a single fish)!!! I’m not joking, I do have some of these fish (without the $100, 000 tag though). These fishes are called Koi and they enter into competitions where contestants can show their amazing patterns off. They can grow to a massive 1m plus and would even let you pat them on the head (as I do to my lovelies)!

Anyway, the reason for telling you the above is that if you wouldn’t dare disrupt the pH balance of the water which is home to your fish for being afraid of the deleterious effects it can have on your pets, how is it you never think twice about the pH environment of your body? I know what you’re going to say. Well, I’m feeling fine Fadi, or the body can take care of itself you know! You’ll be right on both count but there’s a catch. The reason you’re fine (now) is because your body is nice and strong and still has many resources from which it can draw upon, and here I’m talking about drawing on resources to keep that balance (homeostasis) going throughout. Gosh, even a pregnant woman who goes on a starvation diet or worse can still have the healthiest of healthy babies! What does it? Our body getting its priorities right, which in this case baby before mother (maybe because it’s the innocent party in our stupidity to harm or the ignorance of not knowing how to look after ourselves properly). Another example I can give you here is the osteoporosis epidemic that we’re suffering from whilst swimming in that white ocean we call milk and its derivatives. I mean doesn’t that tell you that something is just not adding up here? Yes, it’s all to do with that pH balance, so although I may seem to some of you that I’ve digressed, rest assured that I’m still right on track here. You see calcium is a specialist in being alkaline forming. So here you are abusing your system left right and sideways, throwing your pH blood level into acidic hell, and instead of calcium doing what it is supposed to do and that is look after your skeleton, it gets gobbled up by the homeostasis machinery that is concerned in putting out the acidic rain and quenching it with alkalinity. All the calcium from all the dairy foods is not enough oh no, your body now also goes for your bones and leaches calcium out from them to help bring your blood pH down to where it feels right at home, a blood pH of 7.4. We may hover between a narrow margin that is between 7.35 and 7.45. Actually, a healthy body is slightly alkaline (than acidic) measuring approximately 7.4 pH as I’ve already stated. If I was your bones I’d be suing you right now for stealing from me something that you aught to provide me with instead; calcium!

Let me give it to you straight; cancer! The word makes some of us shudder with fear and anxiety does it not? Well guess what! Oxygen and a high pH blood levels are two states that cancer cells just can not stand to live under. They’d much rather die instead! Really? Mmmm, well good ridden then! Furthermore and just for your information, there are two factors that are always present with cancer no matter what else is present. Those two factors are acid pH and lack of Oxygen. So can we manipulate those two factors to alter the status of the cancer? If so, we need to learn how to manipulate these two factors. Cancer needs an acidic environment with low oxygen to survive and flourish within. Terminal cancer patients are around 1000x more acidic than normal healthy people. The vast majority of terminal cancer patients posses a very low blood pH.Why? http://www.drlam.com/opinion/ph.asp

Well in the absence of oxygen, glucose undergoes fermentation to lactic acid. This in turn causes the pH of the cell to drop from between 7.3 to 7.2 down to 7 and later 6.5 in more advance stages of cancer and in metastasis ( the spread of cancer from one organ or part to another non-adjacent organ or part). The pH drops to 6 and even 5.7 or lower. Here you’re basically looking death in the eye. At a pH slightly above 7.4 cancer cells become dormant and at pH 8.5 cancer cells will die while healthy cells will live… http://www.onlinecancerinfo.com/docs/cancer&pH.htm . So my advice to you is alkalize and thrive!

A question for you nice people; what food type introduces oxygen and causes a shift toward alkalinity in your blood? If you said veggies then let us shake hands because now we both know the secret to veggies’ success story in making us healthy. I actually had 1kg of carrot before I came to work tonight. No I did not eat it, I drank it. 1kg makes 500ml of yummy delicious carrot juice which is very alkalizing indeed. Oh I just remembered there was celery included in the mix also for some amazing organic sodium. So I’d like you to stop thinking fruit and veggies = antioxidants (which they are full of incidentally) and start thinking fruits and vegetable = creating/cultivating the right pH environment. Let me tell you why I’m emphasising the pH point now over the antioxidant or free radical killers (which will be the topic of my next article God Willing). I’ll give you a scenario here to make my message100% one with your mind. Imagine for a moment that we send our Aussie troops overseas to fight in the battle against terror. What good would all the sophisticated military machinery do if this machinery could not withstand certain climate/temperatures? Remember WWII and how the Germans got stopped in their track due to the Russian winter? So the moral of the story here is this; insure a safe and livable environment that would make the good flourish and the bad (cancer) deteriorate and you’ve got yourself one hell of a body that can withstand anything!

So far I’ve mentioned:

1. A bright outlook on life

2.Prebiotics

3.Probiotics

4. Alkalinity and blood pH levels

5.Acidity and blood pH levels

6.Digestive enzymes (I have not touched on this but left it out for discussion times). Bodybuilders out of all people aught to pay full attention here since more food requires full digestion and that can only come when one’s digestive enzymes are working at their absolute best. Are yours?

7.I ask you to please make a serious attempt in looking at the links I have provided for you and take from them as much information as you possibly can.

8.If this message of mine has somewhat motivated you to look deeper into the subject of blood pH and made you question what you’re eating now, then I would have succeed in my attempt to nudge you closer to better health and bigger muscles or less fat or both (which ever is your preference).

In closing I’d like to say this: if you know that you have an anger management problem, or an anxiety attack issues, or you are the overly jealous or envious type, then my advice to you would be to seek help with these issues. For as anger creates a rise in our blood pressure, so do the attributes I’ve mentioned also create an imbalance with our blood pH levels. This takes me back to where I stared with in this small message of mine when I told you that the first serving of the day is not caviar but a bright attitude on life.

Agreed, it's good to know something, but to know why something works shows true understanding and knowledge. That's why I spend half my time researching inane pieces of knowledge so I can figure out why. Good read once again.

very interesting article once again Fadi,
I was wondering when you might be posting the recipe for fatteh, i would be interested in trying it :)
i have issues in the morning being able to eat... some mornings i will wake up hungry and easilly eat eggs, bacon, tomato's etc... but other mornings i struggle to keep down a cup of green tea... this Fatteh dish, is it fairly light?
 
Hi Jman,

The fatteh dish is not light at all but like cement. However it's like no other dish in that although you get full easily, you're hungry for more fatteh within a hour of first eating it. I'll have to make sure of the way it's done since I don't want to lead you astray with it, (my wife will be needed here). One thing you can do is not look at what is on the net. Some really bizzare way of making fatteh there that's for sure!

But the ingredients are as follows:

1. Chickpeas
2. Natural yogurt
3. Sesame paste (tahini)
4. Salt
5. Garlic
6. Lebanese bread
7. Ghee (or butter)
8. Pine nuts
9. Chopped parsley to garnish
10.Cayenne pepper, to garnish

Now it's the quantity and the method of bringing all the ingredients together that makes fatteh the delicious and healthy dish that it is Jman.

Sounds interesitng mate, i guess ive never really considered this sort of meals for breakfast, i might have to give this a try some time, ill keep an eye out for the recipe for when your wife enlightens us with how its made :) .
ive always been better off eating savoury dishes... one thing ive never been able to handle in the mornings is cereals, normal fruity yoghurts etc.... they just make me sick.. to sweet :S

Thank you Jeremy. I'll have to make sure my wife actually measure/weigh things for this occasions since she doesn't usually of course. If you check the ingredients, you'd find both pre as well as pro biotics are present at the same time which makes this first meal of the day a powerful synbiotics. Of course that's not the only way to have breakfast Jeremy, but it is an option if one felt that way inclined.

A very powerful yet a light synbiotics meal for breakfast would be to mix about 150g of natural yogurt (probiotics) with some berries of choice (prebiotics), about 350ml cold water and some added stevia for sweetness. Now that's yummy and healthy with capitals Y & H! By the way, in addition to being a synbiotics meal, its berry contents contain significant amounts of the anti-cancer phytochemical ellagic acid. I urge you to do some research on this mighty acid Jeremy since I find it's great for vision as well as an anti-estrogen in some cases:

PS: Never forget the humble lemon for a breakfast quick refreshing drink that is jam packed with goodies. Water, lemon juice, sea salt, and that's all you need for a quick energy drink early in the morning. In my opinion, it would leave coffee for dead! But that's me and I may be accused of being biased...

Hi Fadi,
Thanks for the great read, will have to reread those lists of foods before I do the next grocery shopping trip tomorrow!

I do have some questions/thoughts regarding the sea salt you mentioned above though.

I see it is listed on some of those sites as an alkalising food so I can understand it's use from that perspective, however we constantly hear many 'reputable' sources advising to reduce salt content as much as possible.
I can see you've mentioned sea salt, as opposed to the chemical in most salt shakers however is this natural salt quite different?

I remember watching a movie n00bs posted about high fructose corn syrup in which the doctor also mentioned how the effect of salt on internal organs was noticable in autopsies today compared to decades past.
I believe his point was along the lines of how we are preserving our organs, however not in a good way.

Appreciate your thoughts on the matter :)

Stralian, sea salt is made up of mainly sodium chloride plus other minerals as God Himself intended: http://curezone.com/foods/saltcure.asp. Table salt is made up of mainly sodium chloride and not much else. I've never said anything negative about salt in all my writings. On the contrary, I'm all for sea salt as I feel alive when I don't cut it. As for my personal blood pressure, it tend to go down or normalise when my salt intake is normal as opposed to been cut. Yes I (like the majority) of people would get puffed up and retain water after say a Chinese meal, but one has to examine what else was included there with the high amount of salt (table salt) that made me or others look like they've been at it for few rounds with Mike Tyson? Salt has had a bad rap just as did Cholesterol, saturated fats etc.

Cut down on salt and see what happens to your muscle contraction or the look of your muscles; flatness would be an understatement. One of the best organic sodium chloride I can think of is to be found in celery as when you make carrot and celery juice.

Please everyone, check with your doctor if you are sensitive to salt of any kind.

PS: Please be aware that to build a healthy foundation, you're going to have to concentrate on the 75 or 80% that is your foundation, and that is made up of (not salt or processed food), but rather vegetables, fruits and food that is alive with enzymes, vitamins, minerals and other body strengthening ingredients, Chemical substances that are just now being discovered like polyphenols for an example...

The more balance we have and the more our foods are intact the better they are for us. Balance can not be had if we concentrate our efforts on having a diet that is made up or built up on single food items, but rather would really prosper the more variety we include in it.

This makes me curious where one can purchase real sea salt from.
Do you find it difficult to come by or have any pointers for hunting some down?

I assume the lemon juice is "as much as you want" and a pinch or two of salt per half litre?

Considering how simple squeezing a lemon and a bit of salt into some water and putting it in the fridge is this is definitely the most practical health advice I have received for a long time!
Even my wife is happy to jump on the lemon water bandwagon :p

Stralian, when it comes to sea salt, grab what appears to be the dirtiest of all that is on the shelf. I usually get the pinky coloured ones. I'm sure a health food store would have different varieties. But the pink one I normally find at Woollies.

As far as the lemon juice drink, it's another traditional Lebanese refresher especially in summer times when visitors come over.

Just the juice of a lemon in a glass of water with salt to taste and Bob's your uncle mate! The salt is great for your adrenal glands and we all know what coffee does to them and what this baby right here is going to do to them...replenish them that's what.

PS: A note of caution is in order here my friend. Never brush your teeth straight after you've had your lemon juice or you will lose a lot more enamel than normal. The citric acid in the juice has a softening effect on teethes' enamel and you wouldn't want to make the matter worse by brushing straight after. I'm saying this incase you decided to have your drink on an empty stomach first thing in the morning, which in itself would go a long way to detoxify your system.

Never forget the same drink with honey instead of salt when your throat is playing up on a cold winter's night.
