Take your chicken breast, make a foil envelope (to be placed in a steamer), add some ginger and garlic (reserve a little to put on top of the breast), put the breast in the envelope, add a drizzle of soy sauce and mirin, put in a thinly sliced spring onion on top and steam until just cooked. Remove, slice and place on a bed of rice. Pour some remaining sauce from the envelope over the top. Enjoy! Simple, clean Asian flavours.
Heat stock in large saucepan until boiling. Place room temperature chicken drumsticks into saucepan whilst simultaneously turning off heat. Place lid on saucepan and wait 35 minutes.
Remove chicken from saucepan, and enjoy tasty, succulent, moist and tender chicken on its own, with dressing of your choice, or in a salad with plenty of greens.
