No picture today but this was great

chicken wings or drumsticks
salt & pepper
1 tsp. garam masala
1 tsp. ground ginger
1 tsp. ground coriander
1 tsp. ground cumin
1 tsp. ground cardamom
1/2 tsp. granulated garlic
1/4 tsp. cayenne pepper (I doubled this up)
salt, to taste
2 tbs. tomato paste
1/2 cup coconut milk

Start by sauteing the garam masala through to the salt for maybe 5 mins until it smells great. Then whisk into the tomato paste and coconut milk. Pour over the chicken to marinade it for as long as you can.

Then take the chicken out and put them in the oven at 200c until crispy. Reheat the marinade as they cool out the over then pour over the chicken

ok that's great but when are you supposed to add the ginger, coriander, cumin, cardamon, garlic et al???
