* Grams of carbohydrate - 6
* Grams of protein - 50
Ingredients:
* 480g chicken breast
* 2 tablespoons butter
* 50g onion, chopped
* 50g carrot, chopped
* 100g pumpkin, chopped
* 1 chicken stock cube
* salt & pepper to taste
Method:
1. Preheat oven to 180°C.
2. Dice chicken and place in a casserole dish.
3. Melt butter in a saucepan and stir in remaining ingredients.
4. Pour over chicken and bake covered for 1 hour, basting every 20 minutes.
