What are your go-to healthy meals

I have gone down the path of laziness, if I can throw it in a slow cooker it is full of win.
Last night was couple tins tomatoes, tomato paste, bunch of spices and other things, beef and lamb mince, capsicum.
Go to basketball, get back a few hours later and it is done. Add pasta, thanks for coming.
Pack up and freeze the rest of it to keep me going for couple weeks along with other stuff

Yep lazy is the way.

Slow cook a big bulk batch and freeze meals for the next week. All you have to do is reheat in microwave.

I abuse the slow cooker way too much. Even stuff that is not "meant" to go in there like curry from the jar type stuff. Only problem with it is the mush factor of vegies

Yep. I put veggies in later sometimes to stop that.

I've said this here before but I even got a big 18lt slow cooker because I was sick of the "family" sized 6lt ones being to small.
 
Huge bowl of vegie soup (like broccoli, cauliflower, or pumpkin) pureed baby food style. Served with a steak, quick stir fry, or nice piece of oily fish. If I have more time then a salad to go with it too. I always feel happy after eating a mega salad and meat lol. And noticeably sad when I eat too much processed carbs like bread or rice for some reason.
And eggs. Lots of eggs. Scrambled or sunny side up though, unless you want to dutch oven yourself after eating poached or boiled.
