Paused bench vs touch and go

Are you asking why lifting, say, 100kg is more beneficial to strength (and size) than lifting 80kg? I would have thought that was pretty obvious.
 
From a bodybuilding point of view either can be used - I'll touch and go with some and then used the paused method sometimes - both are great and have benefits from a bodybuilding point of view.
