Baked Fish On Vegetables

When I first tried this recipe I was really skeptical but it's actually really nice!

Ingredients:
Skinless White Fish Fillets approx 180g each (I usually use Basa)
4 tomatoes
2 large zucchini
Olive oil
lemon
salt and pepper

Method:
Cut tomato and zucchini into chunks/wedges. Toss in olive oil and lemon juice and spread in baking tray. Lay fish fillets on top and drizzle with a little more juice and olive oil. Season with salt and pepper and bake for about 25 minutes or until browned on top. Can add extra vegies if you like and some people add onion and olives but I like it plain like this! The juice from the baked tomato is really makes a nice sauce for the fish also. YUM!
 
whats also good is use above ingredients but bake it wrapped in foil(so it poaches in the juices), and also add a bit of lemon rind(yellow only) some capers and onion,chilli and garlic chopped. cook in oven for about 25-30mins. I did this with white and salmon fillets.
