Raspberry Chia Jelly Ingredients
- 30g fresh raspberries
- 1/2 tbsp water
- 1 tbsp honey
- 1/4 tsp vanilla essence
- 2 tbsp chia seeds
Raspberry Chia Jelly Directions
[*]Mash the raspberries well
[*]Combine all ingredients and set aside for a minimum of 20 minutes. This allows the chia seeds to thicken.
Peanut Butter Filling Ingredients
- 10g dried goji berries (approx. 70)
- 1 tsp vanilla essence
- Pinch of cinnamon to taste
- 1 tbsp no added sugar or pure maple
- 2 tbsp (50g) crunchy natural peanut butter
- 2 tbsp (20g) peanut flour
- 1 tbsp (10g) quick oats
- 2 tbsp (30g) LSA meal
- 1½ scoops (45g) of Bulk Nutrients Vanilla WPI/WPC
Peanut Butter Filling Directions
[*]Cover your goji berries with water (about 1-2tbsp) and let sit for approximately 20 minutes to absorb.
[*]Combine everything into a food processor (including the water of the berries) and blend to combine.
[*]If too sticky, add additional flours such as coconut flour, desiccated coconut, almond meal, more oats or more LSA.
Chocolate Topping Ingredients
- 45g dark organic chocolate
- 2 tsp (10ml) nut spread (can be substituted for any nut butter ie cashew, almond etc)
- 1 tbsp (10g) Bulk Nutrients Chocolate WPI/WPC
Chocolate Topping Directions
[*]Melt chocolate and nut spread in the microwave
[*]Stir protein powder through
To Assemble
[*]Line a mini cake tin with baking paper
[*]Press the Peanut Butter Filling into the cake tin
[*]Layer 2 tbsp of Raspberry Chia Jelly on top
[*]Pour your Chocolate Topping over the Raspberry Chia Jelly
[*]Place in the fridge to setNote: If the chocolate becomes too hard in the fridge it may be harder to get perfect slices. To avoid this run a hotknife through the chocolate prior to it becoming fully set so it’s easier to slice through later!If you ask the Bulk Nutrients team, we like broken chocolate as it adds to the rustic look.
