Mexican Chocolate Protein Pudding

This is a great chocolate pudding for a last low carb meal of the night.
Yep high in fats but mostly the good monounsaturated kind from the avocado and almonds. It's low in carbs and has a lot of fibre.
Macros and pic attached.

Serves 1 or 2, depends on how hungry you are.
You can add whatever else you like to it.... chilli is good :)
It's really good.

Mexican Chocolate Casein Pudding
Ingredients
1/2 ripe avocado (approx 80g avocado flesh)
1 tbsp/20g 100% almond butter
3 tbsp/15g raw cacao
1 tsp pure vanilla (I use organic vanilla beans)
125ml/ 1/2 cup almond milk (or coconut/cow/whatever milk)
1 scoop/30g unflavoured micellar casein (or chocolate)
pinch sea salt
stevia or poison of choice to taste (optional)

Do:
Whizz everything in a food processor or with a blender until smooth.
You may need more or less milk, depending on the protein powder you use. I found about 1/2 cup gave a nice thick pudding texture.

Eat immediately or chill until ready to eat.
I topped mine with a few fresh raspberries...YUMM.

Thanks a lot for sharing. My mother tried to make it when I asked her for that.
It was nice but I'm wondering that the taste was bit bitter.
What are the precautions for next time?

HI Alejandro,

well, it depends why it was bitter. If you are not crazy about cacao, you can decrease the amount to 2 Tbsp easily.

Also, what did she use as a sweetener? Stevia has a taste that needs some getting used to.
If you don't mind a little bit of carbs in there, you could add some maple syrup or a bit of honey or rapadura or coconut sugar.
