Yeah, we're not in Kansas, Toto ... but sweet potato pie totally rocks.

Made a crustless version that's really good...great sweet potato pie filling texture, nice and creamy ... and it's really easy to make. You just mix it all up in a food processor :)

you can use it to fill a pie crust if you want (I didn't, as I'm looking to keep the fat count down).

This is not high in kcals/kJs, has some fibre, low in sugars, and low in fat.
I used unflavoured Micellar Casein but you can easily substitute vanilla casein.
